Green Smoothie

This week Matt and I decided to make some major changes and completely change the way we were eating. I mean, we are getting married in 8 months! We went from lots of carbs, dairy and sugar to completely cutting those out. We are now on a high protein, low carb diet. Its an adjustment for sure, but, we are doing well so far. It has already completely changed the way we look at foods. I think one of the hardest things is trying to figure out what to eat, and also prepping all of our meals. I have been experimenting making smoothies and meals and trying to come up with new combinations. Ok, now that all of that is out of the way I am going to share a green smoothie recipe with you guys. With the diet plan we are following, we aren’t allowed fruits which makes snacks a bit more difficult. I am hoping these help get me through the afternoon slump that I have been feeling the past few days.

 

 

Ingredients:
2 Cups of Frozen Spinach
2 Cups of Water
1/2 Cup of Kale
3 Stalks of Celery
2 Parisian Cucumbers/1 Regular Cucumber
Bunch of Fresh Parsley
About 1-2 Inches of Ginger Root, peeled
Splash of Lemon Juice
Splash of Lime Juice
Tiny bit of Apple Cider Vinegar

 

This recipe will make a whole blender full and will fill 3-4 16oz jars. You can really just eyeball measurements, taste it when you think you are done and you can always add more of something, I added more lemon and lime juice after tasting my batches. I recommend blending the water and spinach first to make sure it all blends in together. If you can, add frozen mango, banana or green apple and it will taste much better! But I have to admit for putting a bunch of veggies in a blender, this doesn’t taste all too bad. I tried to save myself some time in the future by chopping extra veggies and putting them in freezer bags so that next time it will be much easier to just blend it all and not have to chop beforehand, I’m all about trying to make things easier these days. I got this tip from NaptimeKitchen, she has all the best kitchen hacks. These smoothies will last in the fridge for about a week, make sure you shake well before drinking as they tend to separate a little bit.

    I used to have a green smoothie EVERY SINGLE DAY, but somehow over the past few months I have not been drinking them. I really want to get back on it ebcause they are so good for you!

      I didnt think that cutting sugar out was as hard as I thought it would be! I have replaced sugary snacks with veggies and I feel alot better! Hope yours is going well!

    I’m a big fan of green smoothies, but I would definitely have to add some mango or pineapple or something to help add some sweetness…I’m a sugar-aholic though!
