At Home B.Good Salad Hack

Ever have a craving for a dish you had at one of your favorite restaurants but you can’t get there? Well this happened to me the other day so I created the Local Apple and Bacon Bowl from the beloved B.Good, and let me tell you…it was even better if thats possible.

Ingredients:
Kale, lemon, avocado, slab bacon, grilled chicken, apples, dried cranberries, sunflower seeds, pomegranates, scallions (optional), red wine vinegar and olive oil.

First I cooked the quinoa per the package instructions which took about 25-30 minutes.

Then I cooked the slab bacon per the package instructions which was 400 degrees in the oven for about 12-15 minutes but I cooked it a little longer because I wanted it to be crisp. I also grilled the chicken using the broil setting on the oven and just put olive oil, Italian seasoning, salt, pepper and garlic powder on the breasts. Then broiled them 10 minutes per side until they were cooked thoroughly.

While the meats and quinoa were cooking I washed and cut the kale into thin strips and juiced a lemon and put the lemon juice and olive oil on it.

I cut up the apples and avocados, and when the bacon came out of the oven i cut that into small pieces and cut the chicken into strips.

Now once everything is ready put the quinoa down onto the plate, then put the kale on top of it and add all of the toppings on top (avocado, bacon, chicken, apples, dried cranberries, sunflower seeds, pomegranate seeds, scallions). Mix up equal parts red wine vinegar and olive oil and pour it on top of the salad.
