Happy Thursday!
I made this grilled chicken salad with homemade lemon poppyseed dressing and let me tell you it was delicious. I love trying new salads but also sticking to my traditional salads and just changing a few toppings or the dressing. For this one I used romaine lettuce with some baby spinach topped with tomatoes, cucumbers, pears, grilled chicken and sliced almonds.
For the Homemade Dressing:
2 Tbsp Honey
2 Tbsp Sugar
3 Tbsp Apple Cider Vinegar
2 Tbsp Olive Oil
1/2 Cup Non Fat Plain Greek Yogurt
1/4 Cup Reduced Fat Mayo
1 1/2 Tbsp Poppyseeds
1 Tbsp Milk
Whisk all of the ingredients together and chill in fridge for at minimum 1 hour before serving salad.
My favorite part about this dressing is that you get the sweetness of the dressing while using ingredients that are good for you!
Tip: Always keep on hand Apple Cider Vinegar because when making your own dressings so many of them call for this.
